The Whisky Tasting notes of YOICHI

Single cask is the malt whisky that is drawn from one particular selected barrel in one distillery.
It is purely bottled from one barrel without mixing whiskies from other barrels or water. This type of whisky is rare in the world and was first sold by NIKKA WHISKY in Japan. Each barrel has its own flavor because of the difference in material and condition, kinds of trees for barrels, the sizes and times the barrels are used, how to barn and so on. The name of barrels are categorized by their sizes such as "BUTT 500L", "Hogshead 250L" and "Barrel 180L".
The generic term of barrels are called CASK.450 bottles(750ml) are taken from one "BUTT 500L" and 300bottles from "Hogshead 250L". The number may seem to be small but it is because some of the whisky evaporates while they are matured and this is called "angel's share", which people accept as inevitable for making whisky.
It marked the highest score in "THE WORLD'S WHISKY TASTING"in the whisky magazine 2001.

TASTING NOTE OF “SINGLE CASK YOICHI” BY JIM MURRAY

NOSE

Plummy fruit is almost last amid a sea of salty, peaty malt. An enormous bouquet but amazingly well restrained, especially the oak. The sweetness is charming, and appears to depend on the smoky skeleton of the aroma. Quite breathtaking and truly fabulous.

TASTE

A massive peat surge is immediately countered by an oaky driyness.
But soon the peat returns in a kippery, salty style. Massive and chewy with an ever-increasing oiliness and sweetness.

FINISH

Remains oily to the death with a crescendo of spice that dies off to allow wave upon wave of cocoa and that massive, chunky peatiness to cling to the roof of the mouth.

COMMENTS

This is how a single cask should be: enormous and complex yet showing exactly what the distillery has to offer. Huge and uncompromising, this is a true classic among the world's single malts; just about unparalleled as a Japanese whisky.
